Burrata Tomato Salad with Lemon-Thyme Oil
A simple classic that's packed with flavour — creamy burrata, ripe heirloom tomatoes, and a bright homemade lemon-thyme oil. It's easy to prepare and looks beautiful served straight from a Thyra titanium cutting board.
Ingredients
Lemon-thyme oil (makes extra)
- 120 ml (½ cup) good extra-virgin olive oil
- Zest of 1 lemon + 1 tbsp lemon juice
- 4–5 fresh thyme sprigs (leaves picked)
- 1 small garlic clove, lightly smashed
- Pinch of flaky sea salt
For the burrata platter
- 2 balls fresh burrata
- 500 g (about 1 lb) heirloom tomatoes, mixed sizes & colours
- A handful of fresh basil leaves
- Flaky sea salt & freshly cracked black pepper
- Crusty bread or grissini, to serve
Method
- Make the lemon-thyme oil. Warm the olive oil gently in a small titanium pan over low heat — just until fragrant, never sizzling. Remove from the heat and stir in the lemon zest, juice, thyme leaves, smashed garlic, and a pinch of salt. Let it infuse for at least 10 minutes, then lift out the garlic.
- Prep the tomatoes. On your titanium cutting board, slice the larger tomatoes into thick rounds and halve the small ones. The non-porous titanium surface keeps everything hygienic and rinses clean in seconds.
- Build the platter. Arrange the tomatoes across a platter — or serve right on the cutting board. Tear the burrata over the top so the creamy centre spills out. Tuck in the basil leaves.
- Finish & serve. Spoon the lemon-thyme oil generously over everything, then add flaky salt and cracked pepper. Serve immediately with crusty bread to mop up every drop.
💡 Thyra tip: Save the extra lemon-thyme oil in a small jar in the fridge — it's gorgeous over grilled fish, roasted vegetables, or simply with bread. Bring it back to room temperature before using.
